With my sister in town, we had to have lunch at Honor Bar in Highland Park Village. We both loved the Emerald Kale Salad and it’s super easy to make at home as well! Here’s the recipe for those brave enough to try:
- Base
- 1 shredded rotisserie chicken
- 6 cups of kale
- 4 cups of shredded green cabbage
- 4 thinly sliced green onions
- 1/2 a cup of cilantro (I’m a cilantro hater so I skip this)
- 1/2 a cup of parmesan cheese
- 1/2 a cup of chopped peanuts
- Peanut Vinaigrette
- 1 tablespoon apple cider vinegar
- 1 tablespoon of fresh lime juice
- 2 teaspoons of dijon mustard
- 1 teaspoon of honey
- 1/3 cup of roasted peanut oil
- salt, pepper, crushed red pepper flakes to your liking
